Tuesday's Menus!

I love hearing about what you're eating for dinner! I'm going to make Mexican Skillet Rice tonight, which is a mix of seasoned (with chili and cumin) ground meat (I use pork), with chopped onion, already-cooked brown rice, beans and two tins of green chili peppers. We top it with shredded cheddar cheese, waaaay too much sour cream and chopped fresh tomatoes. It's the very definition of 'comfort food'.

Well, I got very curious about this "stuff" called quinoa. So I got some from my internet supermarket and at the weekend I made a recipe from Rose Elliot's "low GI cookbook", whatever that means. This is quinoa, red onion, balsamic vinegar, olive oil, grated beetroot and fresh parsely. Delicious hot on Sunday, and delicious cold on Monday and Tuesday.

(Malcolm had a grilled lamb chop and a baked potato with his tonight -- actually I did not see him eating much of the quinoa, come to think of it -- he seemed to be heretically making do with cherry tomatoes and green salad leaves.)

My husband made dinner tonight. The menu included baked fish, garlic mashed potatoes with cheese and bacon and garlic bread.

Quinoa is apparently very good for you! I haven't tried it yet myself, but your blend sounds quite tasty, Maxine.

Kimmy, you are SO lucky! In twenty-five years, my husband heated a can of beans ONCE and his 'standing offer' for any day I can't cook is to make tuna sandwiches. I can't tell you how I dread those tuna sandwiches!

I love cooking for a dinner party but hate the everyday stuff. I often ring a friend and say 'what am I having tonight?' and she supplies me with a few suggestions. Tonight we had veg mousaka for the veggies and a lamb one for the carnivors. I managed this all by myself!

Sorry Susan! I am lucky, my husband actually likes to cook, particularly summer grilling. He's amazing at that!
